What's for Dinner, Thurs., July 14, 2022

The garden is full of squash, so I made stuffed squash. The stuffing is chopped onion, garlic, tomato, pepper, grated carrot, and the middle of the squash itself, sans the seeds. Oh, and a little chicken sausage, too. Lotsa' cheese: feta, and I put a slice of provolone on top. Then chopped herbs, basil and marjoram.






I actually cooked the shell of the squash in the air fryer because I didn't want to heat up the kitchen. First I seasoned it, then sprayed with olive oil and added S&P plus garlic salt. Then I added my filling. Nice way to cook it in the summertime. Hey, it's 88 here.

Will have at room temp around dinnertime.

Dessert is my fave Thai banana fritters. I am down to the last fritter so I will have to go to TJs for more. I figured out how to extend this last fritter, though: add milk chocolate to the top. This, too, is an air fryer specialty.
Iced coffee with half 'n half.

with the types of squash you are growing. All I have in my garden is zucchini and spaghetti squash. So cool you cooked that in your air fryer. We cook in ours a lot too.

Tonight we are having? LOL don't know. Need to look in the fridge and dig up something.

Not familiar with the types of squash you are growing.

I have to special order these seeds because I can't grow most squash here. Regular squash dies because powdery mildew sets in during early July and I can only get one or two squash before tearing out. Same with cucumbers, which I also special order. I think it's called DMR 41 or something along that line.

What you see in the pic is cousa, tatuma, and a variation of winter squash (the wrinkly white one).

The cousa is realllllly good! That is the one I cooked today.

I don't get any powdery mildew with these variations.

Fried chicken chunks, lettuce, tomatoes from the garden, cucumber, green onions, black and green olives, pears, red grapes, peas, pickled beet slices, dried cranberries, candied pecan pieces, bleu cheese crumbles, chunky bleu cheese dressing.

Served with garlic bread.

ham & cheese omelet and home fries.

Al had emergency surgery on his left eye this afternoon, and we just got back about half an hour ago. I had something else planned for dinner, but I'm wiped out, so we'll keep it simple.

Al's doing well. The pressure in his eye has been alleviated. We do not know how much of the sight in that eye will return, but the doctor says he really likes the way things went w/ the surgery and that he is hopeful.

He will have the same procedure on the right eye in the beginning of August.

and decided on fried egg sandwiches on toasted bagels with melted cheese and orange marmalade. Grapes too.

Hi! New here. Hope its ok to post. I figured, we all have to eat!

The green squash looks like an "8 Ball" variety? I believe thats the name of it. Anyways, I had meatballs, mashed potatoes with gravy, and green beans.

Mine are actually growing for a change, but haven't flowered yet (I'm notorious for planting 4 zucchini plants and getting a grand total of 3 squash - and that was a good year)

Dinner was creamed salmon with mushrooms and pasta. Got a big piece of salmon at Costco to make gravalox for a party this weekend, and being Costco it was a huge amount. I used about half for the lox, froze a third of the remainder, and had salmon fillets yesterday.
