What's for Dinner, Sat., July 16, 2022

I don't know what I'm having yet, but I'm just posting so others can comment.

I am looking through a cookbook I saw written about in The Washington Post. It's Tieghan Gerard's Half-Baked Harvest. Vegetarian food.

I'm a little disoriented from a bad dream, so maybe I'll just have Trader Joe's Chinese dumplings.

We are having fried chicken legs and thighs. Mashed potatoes and gravy with sweet corn, crescent rolls and peach pie for desert.

Peaches from the Carolinas are really good right now and only $1.29 a pound. Time for a cobbler. Probably baked chicken breasts stuffed with pesto, cheese, etc. Maybe whip up a quick marinara sauce for a pasta side.

I brown chopped onions and fresh garlic with the ground beef and then add V8 juice and spices (cumin, chili powder, oregano, s&p) instead of the packaged seasoning mix.

Homemade traditional guacamole and fiesta cabbage salad (that's so good, I eat it for breakfast with a fried egg on top!)

Having it over rice. I got an ear of sweet corn for each of us at the Farmers Market this morning, so that's the side.

Church potluck tomorrow, so lots of cooking today: deviled eggs, mojito fruit salad, and an antipasti pasta salad.

8. Catfish & Crawfish Imperial Bake

It's the Louisiana version of an east coast dish, rockfish or cod stuffed or topped with crabe imperial. I found it several years ago in Chile Pepper magazine. Unfortunately, I think it stopped publishing. It was a very good magazine.

A mixture of crawfish, onions, jalapeno, celery garlic and creole seasonings is cooked, then mayo, pimento, mustard, worcestershire, green onion and more creole seasoning is mixed in.

Put 6 good sized catfish fillets in a 9X13, top with the crawfish and bake. Then top with bread crumbs and baked a little longer.

I'm also making dirty rice, but that's a box of Tony Chachere's.

My neighbors had some health problems this week, so I'm taking half to them when it's done.

Cheese (a white extra sharp cheddar) and Ritz crackers
Usual garden salad ingredients plus broccoli crowns with the last of the Skinnygirl poppy seed dressing
A small pulled pork bbq on potato slider bun with coleslaw

Bigelow mint tea
