What's for Dinner, Mon., July 18, 2022

Tiegen Gerhard's Wedding Soup, cold. Did you know wedding soup isn't served at Italian weddings? It's called that because of the way the flavors blend together.

Tiegen educated me on that in her new cookbook, Half-Baked Harvest. So glad because (OT) I am not fond of the institution of marriage. Whenever I would run across that recipe I would go "ehhh," for no reason at all, I now find out.

Anyway, back to the subject. This soup is delicious served cold. Here are a few of the items she says to put in it: parsley, basil, oregano, smoked paprika, fennel seeds. As veggies, onion, carrots, garlic, celery, and spinach. I used Swedish meatballs from the freezer so it was fairly easy to make this recipe. Practically everything was fresh from my garden. It's been chilling since late last night, so it's very cold.

Dessert will be something with fresh strawberries, which I just picked up today. Maybe a strawberry-banana smoothie.

strawberries with balsamic. Love that.

2. Fish & brown butter garlic noodles & cold decafe tea

It is brown butter because the 2 cats together somehow pushed the chair in the living room over. 6 years the chair sat there in peace, today was the day I guess. When I heard the crash, I turned off the heat, didn't remove the pan though, hence the brown garlic butter.
Both cats are now sleeping on the couch.

a toss salad with poppy seed dressing, and a dinner roll. Strawberry pie for desert.

Unfortunately, my sister let it scorch so we couldn't serve it. My husband thinks it's the best food on earth, and I later made it for his family since they didn't get to have it that day and it was a huge hit. Have been making wedding soup for decades, but have never eaten cold because I love to melt the parmesan cheese throughout my bowl.

We're having the last of the pork chops and garlic butter potatoes tonight, with Brussels sprouts since I'm out of fresh corn until grocery day.
