Stuffed squash. I figured out a way to do it without heating the oven because it is so hot here.
I cut the squash (delicata) into 1-inch slices. Then I hollowed out the seeds so I had a round circle for stuffing. I put them in hot water from the microwave to parboil them.
I took a mixture of chopped onions, peppers, tomatoes, and and Italian sausage or two from my slow cooker project a few days ago. I filled each squash with the sausage and veggie mixture, brushed it with basil pesto, and put it in the air fryer.

I might top some with parmesan. I'm putting chopped herbs, as in basil and parsley, over them.
Dessert is iced decaf with my fave TJ Thai banana slices. Oh, and a chocolate or two from the ones the RG sent me.

(9,995 posts)We're having BLTs. We do that at least once a week, sometimes twice, in high tomato season.
If I have enough energy I might put together a skillet peach cobbler later.
