Where is Lucinda and what is she having for dinner, Saturday, July 7, 2012?

Hope all is well with Lucinda and she is just enjoying a wonderful holiday weekend.

Just finished making chicken parmesan, a recipe I'm testing for America's Test Kitchen. I was a little reluctant to make it because it calls for breading the chicken. You know, flour, egg wash, then the breading. Brought back memories of making fish as a youngster for my family during Lent and all the work that entailed. And the cleanup! YIKES! Well, there was a lot of cleanup making this recipe too, but frankly to make it from time to time is well worth it. Here's a pic.

those dishes are worth the effort on occasion.

my bffs had a cajun boil tonight, i don't like shellfish, but i had taters, corn on the cob and andoullie. there we olives and veggies and dip to nibble on. we brought bacon asparagus salad and a batch of the naughty bars guardian posted, both of which were devoured. lots of beer was consumed.

i just nibbled a bit on cheese and homemade bread, don't think anything else will fit.

what you mean about the extra effort on occasion. But . . . I HATE the cleanup.

Sorry to hear that you did not like the cajun boil, but at least you had those wonderful naughty bars!

That could be a professional food photo!

Chicken parm is one of my all-time favorite comfort foods.

Spouse fixed dinner on the grill. First he marinated big steaks with garlic, olive oil, and herbs. He also made corn. Fennel salad. A loaf of French bread. Waffle potatoes which were baked in the oven.

For dessert, we had pistachio gelato.

Hmmmmmm . . . that steak sounds good. Haven't had a good steak in a long time and I just may "copy" your recipe!

Chicken parm can get really greasy (even though my mouth and my belly loves it), but that picture looks really nice. Are you baking that somehow?

ETA: I work nights so I just had my dinner - it's the Hearty Beef Stew from Cook's Illustrated. I've made it so many times now, I feel like it's mine.

the chicken parmesan was not greasy at all. Only used 1/2 cup olive oil and I must have had it at that wonderful exact temp.

Ohhhh . . . hearty beef stew sounds good too.
