Eggplant slices dipped in a mixture of 50/50 parmesan and panko. Air fried. On top, chopped cubes of smoked mozzarella, cherry tomatoes, and basil. Salt, pepper, and a drizzle of olive oil.
Here's the eggplant, which I grew. It grew considerably, though, since I took this photo!
Chicken salad made with sliced almonds and grapes. Putting this on crackers.
Cranberry peach kombucha.
Dessert: peach smoothie.

Dad had "mojito" marinated shrimp, broccoli & cheddar pasta, and steamed cauliflower, broccoli and yellow squash.

(17,018 posts)I made some jalapeno chicken, but wasn't in the mood for that by the time I was done with errands. I stopped at Long John Silvers and got a 2 piece fish dinner, with 2 hushpuppies and 2 sides of slaw. I saved one serving of slaw for tomorrow.
For dessert, I had some sliced peaches with homemade whipped cream.

I have been shying away from eggplant as the last couple I purchased were so yucky I had to toss them.
But I do have a Japanese eggplant recipe that I want to try, so I'm going to purchase some from the Farmer's Market and keep my fingers crossed.
For my supper? I just got home from a short road trip and will most likely just have a sandwich.
