Breaded chicken cutlet with tomato sauce and mozzarella/parmesan over it. A little ziti to go with it.

Sliced eggplant, also breaded with parmesan and panko (50/50 mixture). Tomato pesto made with parmesan on top, then cherry tomatoes, mozarella cubes, and chopped basil leaves. Lots of basil. Eggplant made this way is so good: I've made it for several friends in the last week and they raved about it.

Peach smoothie for dessert.

1. We had ribeye steak, corn on the cob,

4. Halibut cheeks piccata.

Big green salads and a crusty sourdough bread to mop that lovely sauce.

5. Lazy Sunday

Knorr rice mix with veggies, beef and beans.

6. Brisket, mashed dirty potatoes with gravy, cottage cheese tomato salad.

7. Busy today so dinner is quite simple.

Grilled chicken breast (with a rub), potato packets on the grill and parmesan zucchini and corn for the side.

8. Burgers.

Both probably with garden tomato and dill pickle slices. His with sharp cheddar, mine with a slice of onion. He's having fries and Brussels sprouts, I'll probably have the last ear of fresh sweet corn, steamed and cut from the cob.

9. Vegetable fajita bowls

The recipe calls for serving guacamole, salsa, refried beans and fajita vegetables over greens, but we had it with rice (leftover basmati for the guys and cauliflower rice for me). It was a very tasty and filling build-your-own supper, relaxing and enjoyable for a Sunday evening.

There were Duchess apples yesterday at the Farmers Market, so dessert tonight is apple crisp.

10. My daughter is staying with me so she wanted her 'birthday' dinner for years...it is not her

birthday but why not? So I made Chicken Divan and a big fruit salad. Chicken Divan is made wth homemade cream of chicken soup (gluten-free)then you add some mayonnaise to the soup and some cheddar cheese to taste salt and pepper layer broccoli, chicken, and sauce...grated some cheese on top. Bake a 350 F. And for dessert we have candy.

12. i made beefy-onion brown rice yesterday + today i made a big pot of my grandma's meatballs.

slight tweaks. dash Worcestershire sauce, dash ketchup. bit of milk.

I had the leftover scalloped potatoes w/ kielbasa, and a sliced tomato


for dessert: I made a homemade apple crumble. Ice cream on top.
