What's for Dinner, Wed., Aug. 24, 2022

Appetizer is a cup of my cold, creamy cauliflower soup. It's hot here, so this is a good way to start off dinner. This soup turned out so well (Taste of Home recipe). I made a topping for it: fried sage leaves (using butter) and toasted pistachios.

I noticed cauliflower is starting to come in now at very reasonable prices: $2 a head on sale.

Shrimpburger with additional shrimp added on top. Sauce is made with mayo, sesame oil, and grated ginger. Serving this over a toasted slice of 21-grain bread, and it's open-face.

Cucumber salad with red onion and sour cream.

Bowl of cherry tomatoes with chopped basil.

Dessert: teensy, tiny slice of carrot cake with cream cheese frosting.

Earl Grey iced tea.

sliced pears and arugula. It is a Jamie Oliver recipe that I make again and again. I'll serve a tossed salad on the side and a second salad of new potatoes and wax beans in a basil vinaigrette.

FYI…I’ve used a thinly sliced peach or nectarine when I couldn’t find a pear. Equally good.

with a big arugula/spinach salad, and sautéed mushrooms and red onions. Cabernet sauvignon. Homemade pistachio "ice cream" - made with nonfat vanilla Greek yogurt and oat milk.

on Hawaiian rolls. Sliced Beefsteak tomatoes from the garden. Homemade Chipotle Mayo. Sliced red onions.

Pineapple cole slaw, also homemade

I’ve got several containers of ice cream in the fridge for whoever wants dessert.

Homemade baked beans and smoked sausage with homemade coleslaw. I was going to make cornbread with niblets in it tonight, but the temps went back up into the 90s, so not into cranking the oven to 400 for half an hour.

Drinking Fresca and water.

I’m grilling a flank steak that we marinated in lime juice, orange juice, cumin and salt & pepper. I’m aiming for medium rare then I’ll slice it thinly on the diagonal. Grilled corn on the cob and a garden salad along with the meat. Pinot noir and iced lemon water.

Simple dinner tonight.
Homemade tomato soup, zucchini oven fritters, cucumber quick pickle.
All garden produce.

I had a piece of smoked sausage left, so I sliced and browned that, added some sliced hatch chile, mushroom, onion and garlic, marinara and arugula. topped with fresh basil and asiago.
