What's for Dinner, Mon., Aug. 29, 2022

Salmon salad. I poached two pieces of Sockeye salmon late last night and chilled them. I also made a huge tossed green salad with ruffly green lettuce, cucumbers, dill, cherry tomatoes, and scallion.

Juicy Peach Kombucha (new flavor).

Dessert: stopped at Trader Joe's and got some of those thin windmill cookies. I'll have those with iced decaf coffee.

Stir fry with beef, celery, carrots, onions and broccoli with garlic, oyster sauce and a dash of Chinese hot sauce. Served on glass noodles.

Orange slices for dessert.

I saw the video here a few days ago. I have some leftover hot italian sausage, so I'll use that, peppers, onion, tomato and garlic.

We split a huge sweet potato, w/butter and bleu cheese. He had peas, I had sweet corn, steamed and cut from the cob.

Both had water. I'm out of ice cream. Might have some cantaloupe later.

We had a huge thunderstorm come thru. Had I known that was going to be an accurate forecast (storms usually fall apart by the time they get here from the middle of the state), I'd have waited to make the ribs in the oven today instead of slow cooking them yesterday. But, it dropped the temps by 20 degrees for the rest of the evening, so I'm thankful!

12. Here's How To Make Them.....

Take a 12 cup muffin tin and line it with foil liners.
Preheat oven to 400 degrees
Bring a big pot of salted water to boil
Boil you favorite ravioli (I used sausage fill Rana ravioli)
Package calls for 4 minute cook time - only cook for 2 minutes
In a skillet drizzle 2 tablespoons of EVOO
Saute 1/2 medium diced onion or shallot and 2 garlic cloves minced
Add and cook baby spinach (I used organic baby spinach from Aldi's) whole container
When spinach is reduced, drain and cool spinach mixture in a bowl
Add 1 tblsp of EVOO; i egg and 1/2 cup of grated Parmesan cheese and stir till mixed
Spoon 1 tblsp of your favorite tomato sauce into each muffin cups
Drop one ravioli on top
Add 1 tblsp of spinach mixture and another tblsp of tomato sauce
Drop another ravioli on top - another dollop of tomato sauce
Then top with mozzarella cheese
Slide muffin tin in oven and bake for 20 minutes at 400 degrees
Take out of oven - heat up remaining tomato sauce to serve on the side
Enjoy!!!

Real easy to make. Use whatever type ravioli filling you enjoy or mix flavors.

I have been wanting soup salad and breadsticks.
I only go there for that combo.

Making chocolate zucchini bread now so will have that for later. Zucchini starting to come in great.
Using it and putting some away in freezer too then will start to give some away. Gardens here have been finicky with all the rain some I know lost their plants but mine are huge!
