What's for Dinner, Mon., Sept. 12, 2022

Italian sausages (sweet) made in the slow cooker. Adding caramelized onions to go over them.

Mushroom ravioli with a pasta sauce I picked up at Trader's this afternoon--Cacio e Pepe.

Zucchini (I pick them small) sliced on the mandoline. Olive oil/lemon vinaigrette with feta cheese crumbles.

Dessert: Spicy chai tea with a chocolate covered biscotti.

We FINALLY got to go grocery shopping. Terrific sale on fresh haddock.

So, I'll bake that w/ dill, lemon zest, bread crumbs and butter

sauteed zucchini
macaroni and cheese


Ice cream for dessert. (I don't eat much ice cream but there was a Tillamook flavor I just HAD to try: white chocolate raspberry.)

(The only whole wheat tortillas I could get that aren't ridiculously priced were the smaller sized ones.)

Filling that I've been making for decades: ground chuck browned with salt, pepper, garlic powder, mix in refried beans and medium Pace salsa.

The usual toppings: extra sharp cheddar, tomatoes, jalapenos, onion, sour cream, Frank's Red Hot (forgot to get lettuce.)

Choice of ice cream later.

Water and Fresca for me (probably not eating), coffee and water for husband.

Sprinkle a little decarb weed on it and you have magic chili.

TJ is still sleeping off her Sunday night shift at the medical center.

I was getting hungry and didn't want to cook without her input, so I fixed a turkey sandwich on toasted whole wheat with lots of lettuce and tomato.

It was good, but not enough. I'll eat some black grapes now and see if there are any Lima beans and/or mac & cheese leftovers.
