I have beautiful Japanese eggplants from the garden, so I'm making Miso-Glazed Eggplant. Not my picture, but it should look like this:
Small piece of salmon, which I will poach.
Dessert: raspberry-blueberry milkshake. Decaf coffee.

(22,767 posts)Same as last night with a slice of garlic cheese Tx toast. We don't eat bread with meals that often, so I forgot I had it in the freezer. I just ate a slice of that as my dinner. May eat something else later if I ever feel hungry.

(1,766 posts)The husband and I enjoy simple but flavorful meals like this that produce leftovers, but not so much of those that we get sick of it.

(22,767 posts)We have very limited income so I tend to cook things that are flavorful and have at least a couple of days of leftovers. It's a huge savings on the grocery budget and it means I don't have to cook every single day. The upside is that most of these meals are even tastier as leftovers.
Since I've not made this particular recipe before, I'll report back with results in tonight's dinner thread.

It wasn't till I plated the food I realized I should have added a green veggie. Ah well.

(14,895 posts)Lately, I've been reluctant to purchase eggplants. The last couple I bought were nice and firm, no spots, etc. but the insides were yucky.
Maybe I'll try again and buy some at the Farmer's Market this weekend.

Side is a cold "salad"; green beans, shredded carrots, scallions with homemade Italian dressing.

(1,766 posts)I have a coupon for a free original burger that expires tomorrow. Free is good. To go with it: Their onion rings with spicy ketchup. Drink: Stevia-sweetened lemonade I have in my fridge. Dessert: Two miniature Reese's dark chocolate cups for dessert.
This is a "splurge" meal for me. I find that I stick to low-carb if I give myself a fast food treat day once every month or two.
Since I knew I was having WB, I had sausage and egg with dairy-free cheese (allergic to dairy) on some low-carb bread for breakfast. Oh, and a kiwi. Salad for lunch. That should give me some room to accommodate WB.

Not fun. That's all I'll say.
Now the salmon...

(38,581 posts)we had some leftover pasta and sauce from our chicken parm (from the other night) and there was ground beef that we didn't use when making burgers last night--dinner!
Dessert: lemon dump "cake"
(Not a cake. Delicious, but not a cake. It's almost like an upside-down lemon bread pudding.)
