It has happened more than once that I've run out of Sriracha AND my local grocery store also was out.
Anyone know of a copycat recipe that at least approximates Sriracha?

which is one of the Chinese seasonings I used a lot before Sriracha appeared on the grocery shelves.
I would think that fresh, hot red chile and garlic in a blender might do the trick. No amounts, depends on which flavor you want to come forward. Just be aware that hot chile tends to get hotter when it sits for a while.
Sriracha also contains salt, white vinegar, sugar, and potassium sorbate.
Do not use chili powder, that weak-ass stuff won't work.

It might disappear for a year or more unless the shitty weather pattern ends and the southwest drought reverses. Otherwise, a lot of stuff is going to disappear, like cities and towns.
