What's for Dinner, Sat., Oct. 15, 2022

Chicken salad made with dried cranberries, fresh celery, and red shallot.

This is the chicken I made in the slow cooker two days ago.

On top of the salad I put pistachios and Chinese noodles.

The bed for the salad is freshly picked arugula and red lettuce.

Around the bed of the chicken salad I put sliced cucumbers, which I seasoned with salt and pepper.

Dessert: Cold vanilla nut decaf, vanilla Greek yogurt and fresh raspberries.

I had 1/4 chicken oven roasted with rice, barley, lentils, cabbage, carrots, kale, sweet potato. Ate very early today, 4 pm, because I'm hungry and am not sleeping well when eating late. We'll see how this goes.

I don't know if this is an occasional post, just glad summer's shenanigans are over.

There was so much on it, it was extra filling. So, we're finishing it tonight and I have the chicken spatchcocked and dry brining in the fridge for tomorrow. It will be much cooler tomorrow, so better day to roast it than today since the temps have temporarily gone back up.

ETA: your dinner sounds delicious and refreshing.

Spring greens salad with cherry tomato halves, crumbled bacon and walnuts with an Italian dressing.

Entree
Sausage raviolis in the First Mate’s boatmade spicy crushed tomato sauce.

Dessert
Brandy and Scrabble.

That's all I've come up with so far. I'm not feeling my perky self so don't really want to spend a lot of time in the kitchen this evening.
