(22,767 posts)Getting ready to make the stuffing, which will go under the skin with pats of butter, as well as under the whole spatchcocked bird. Serving sweet potatoes baked in butter and brown sugar, cranberries, Brussels sprouts.
Sort of a mini turkey day dinner with chicken instead of turkey.
Always drinking water!

(22,767 posts)I do this with my holiday turkey, too. I always spatchcock the birds, so I can't really stuff them, so after dry brining, I put the stuffing up under the skin of the breast and thighs, and under the breast cavity of the whole bird. Bake at 475F (time depends on the size, this took about an hour) and you get a lovely brown and crispy skin and very moist and tender meat, even the breast.

I stock my freezer with bags of them during the holidays so I'll have them all year round.

(36,281 posts)I have a bunch of store bought dumplings and bao in the freezer. My wife has been dog sitting for some friends at night these last several days, so it's just me for dinner and I could live on Chinese dumplings and noodles with black vinegar and chili oil.

(36,281 posts)Much milder than distilled white vinegar. The brand I'm currently liking is Shanxi Superior Mature Vinegar (three years aged). I add it to noodles and dumplings, along with homemade chili oil.

(16,963 posts)I usually cut up 1 chicken breast, bite sized pieces, saute in olive oil with chunks of onion, minced garlic, jalapeno slices. After the chicken is cooked, I put it on a platter and use the same pan to saute more veggies. Kroger has a frozen Mexican style blend (corn, pepper, broccoli, cauliflower) that I like, and I add okra, more broccoli, bell pepper, and zucchini, if I have it. I use pepper flakes, black pepper, paprika, turmeric and Badia Complete seasoning, and a dash of hot sauce.
I've been using 1/2 bag of the Mexican blend, and another cup or so of additional vegetables and get about 2-3 meals for me. You can be very flexible and add vegetables and seasonings of your choice, as much or little as you want. And you can leave the chicken out, just make jalapeno stor fry
If I want a little treat, I top it with bleu cheese crumbles, a drizzle of ranch dressing, a sprinkle of sharp shredded cheddar, and bacon bits. With or without the toppings, I look forward to this for dinner

(16,963 posts)For myself, I don't make rice. Once in awhile, I'll heat up a burrito shell and have it on the side. I like to roll the shells up and just take a bite with a forkful of the other stuff. And I sometimes cut an avocado, add some salt, pepper, cayenne, and Badia Complete. I just like the avocado out of the rind.
I think I've had rice with this a couple of times, but I'm happy to have it on its own.

(17,442 posts)Pork Steak seasoned overnight with a rub of cayenne, paprika, garlic and more. Then baked covered for 3+ hours in a 250 oven. A light brushing of BBQ sauce for final hour, then uncovered in a 375 oven for 10 minutes to set the sauce. There were more steaks than room in the pan so they were stacked. They were flipped and stacked again about every 45 minutes. I bought these because they were 1.48 per pound, but I wasn't sure how to cook. They turned out great with just enough heat from the cayenne.
Baked sweet potato
Salad with a low carb Italian dressing.
If I have an afterward it will be yogurt and blueberries.

These were bone-in and sliced about 1/2 inch thick. They were about twice as long as pork chops I buy and the same width. Noting the comment about "tougher than pork chops" is why I decided to slow cook them. They ended up very tender and were not very much fatter than chops. These were from a local butcher in a small independent store and marked down 50%. They cut daily and when it has been out for a day or two they put it a freezer for 1/2 price.

Basically flour, riced potatoes, blanched spinach salt. Form dough, roll into ropes, cut, roll against fork to form ridges. Boil. Serve with organic san marzano sauce and meatballs.

Ask your family how you keep them from puffing up so ridges disappear.
Thanks on sauce.. been trying for years to create my Aunt Connie's sauce. I can still remember the smell walking into her apartment. It was like heaven to me. Plus my two cousins had Roy Rogers bedspreads. Lol
