(27,813 posts)They turned out well. I mixed the pork with chopped poblanos, onions, and tomatoes, salsa verde, and cumin, garlic powder, s&p, cayenne, and red pepper flakes. I used both salsa verde and enchilada sauce on top, with lots more shredded cheese, fresh onions, tomatoes, and peppers.
I made a garnish salad of lettuce, tomato, and peppers to put on top (plus salsa and sour cream, of course).
I made yellow rice to go with it. First I toasted the rice in olive oil with onions, fresh garlic, and more peppers, then cooked it with chicken broth that I had mixed with turmeric, cumin, s&p, and cayenne.
It was good, considering I just combed the pantry for stuff I had.

Hey, sometimes it all comes together and this was one of those times.

(27,813 posts)I bought and froze meat on sale, and I started always keeping a variety of peppers on hand. Now if I don't have peppers and tomatoes, I feel as if the cupboard is bare.
