Diner soup and salad

Decided to do something more in tune with the thermometer only reaching 9 C today.
When life gives you lemons, make avgolemoni soup. Used the mixed bird stock from the freezer and risotto rice. Reviewed a few recipes to come up with one.
The only trick is to temp the eggs and lemon juice mixture before you add it to the soup at the end.

so helping it out with chicken and/or duck would be helping it a lot.

Mixed critter stock has been around for a long time, bones from beef, bird, sheep, and even pork combining to make a rich meat stock that can be used for many soups and sauces. Call if Frankenstock if you will, it's still good.

Don't quite remember what went into the pot. I have a bag that I put bones into that stays in the freezer.
