sausage, egg & cheese, tots and salsa on a flour tortilla
LOTS of coffee

I woke up CRAZY early and CRAZY hungry--a bad combination. Wanted breakfast, but didn't want to wake up Al by making noise in the kitchen.

I get to see my granddaughter today! (Oh, yeah. My son and DIL too. LOL)

Looks like I'll be fixing sausage gravy and biscuits by request this morning once I get settled.

ETA: going to make a double batch of tapioca pudding today. That single batch didn't last 24 hours.

was it ever delicious.

Since it's almost lunchtime, I think I'll finish up a soup I started last night.

In addition, I'm trying cooking broth recipes from a new collection of plant-based recipes. The name of the cookbook is The Fiber Fueled Cookbook and the author is an M.D., Will Bulsiewicz. The one I made is with mushrooms and is called "Biome BrothUnleashed." On that one, I have to take out the veggies that made the broth and decide with which recipe to use it.

(note: there are lots of pics and an index at the "look inside." )
