What's for Dinner, Sun., Nov. 13, 2022

Creamy Carrot-Kohlrabi-Savoy Cabbage Soup. I started this last night and had a version of it for dinner. I liked it, but I also like to change my soup recipes around so it seems like I'm having something different the next time I serve it.

Today I made it a creamy soup by pureeing the vegetables and making a creamy base with 1/2 'n 1/2 and milk. It turned out to be a light carrot color.



For future servings, I slow cooked prosciutto to add. I made various herb combinations, too, to sprinkle over the top (parsley, dill, caraway).

Made ham sandwiches with roasted tomatoes on ciabatta to go with the soup.

Peach kombucha.

In addition, I'm cooking broth recipes from a new collection of plant-based recipes. The name of the cookbook is The Fiber Fueled Cookbook and the author is an M.D., Will Bulsiewicz. The one I made is with mushrooms and is called "Biome BrothUnleashed." On that one, I have to take out the veggies that made the broth and decide with which recipe to use it.

For dessert, toasted chocolate chip waffle with coconut vanilla Greek yogurt. Topping is toasted almonds. Hot Earl Grey tea.

double dredged and fried, garlic butter potatoes and peas. I'm nauseated again, so not eating. Barely got through cooking. Have a regular follow up appt with the doctor on Wednesday and made a note to mention it.

...and quartered baby bok choy sauted with ginger, garlic, and scallions. Maybe a few dumplings of some other sort while the steamer is hot.

I'm also baking fresh bread today and making a double batch of fresh linguini for dinners next week.

Edit: auto correct changed quartered baby bok choy to quartered baby boy.

9. I love all the soups

It must be the weather. Sunday is the day I make some big thing to eat a couple times during the week or to preserve some of it for later weeks. Since I have at least 2 later work nights every week when I get home around 7, it's a real help to have hot food in a few minutes.

Today it was a large pot of beef, barley and mushroom soup. With grilled cheese tonight; later this week, who knows? I should have about 3 quarts left over to can for the pantry.

And for breakfasts this week, I took my 'general rule' recipe for muffins and coffeecake and made it into sour cream, oatmeal and hazelnut muffins. They won't last the week, though - DH has already gotten into them and I think I can expect further non-breakfast inroads. If the cat doesn't get them first. Fast Eddie was trying hard to play sous chef while I was mixing them. He loves his baked goods. Meat, not so much. He's a very strange cat.
