What's for Dinner, Mon., Nov. 14, 2022

Saw a new Chinese buffet had opened up, so since it was around 11 a.m. I figured I might be one of the first customers. I was! Everything had just been put out, so I bought vegetable lo mein, sesame chicken, chicken with broccoli, carrots, peppers, and onions, and salt and pepper shrimp (breaded).

Trilogy kombucha.

A couple ginger-pumpkin cookies, half an orange, and a hot Earl Grey decaf for dessert.

For some reason the word “sauté” won’t show in title

Thyme and soy sauce work well with cauliflower.

Cauliflower Soup

INGREDIENTS
* 1 medium head cauliflower, broken into florets
* 1 medium carrot, shredded
* 1/4 cup chopped celery
* 2-1/2 cups water
* 2 teaspoons chicken or 1 vegetable bouillon cube
* 3 tablespoons butter
* 3 tablespoons all-purpose flour
* 3/4 teaspoon salt
* 1/8 teaspoon pepper
* 2 cups 2% milk
* 1 cup shredded cheddar cheese
* 1/2 to 1 teaspoon hot pepper sauce, optional
DIRECTIONS

DIRECTIONS
In a Dutch oven, combine the cauliflower, carrot, celery, water and bouillon. Bring to a boil. Reduce heat; cover and simmer for 12-15 minutes or until vegetables are tender (do not drain).
In a large saucepan, melt butter. Stir in the flour, salt and pepper until smooth. Gradually add milk. Bring to a boil over medium heat; cook and stir for 2 minutes or until thickened. Reduce heat. Stir in the cheese until melted. Add hot pepper sauce if desired. Stir into the cauliflower mixture. Yield: 8 servings (about 2 quarts).

the crust has been rising for several hours (it's cold here!) and the sauce is in progress. Toppings are pepperoni and some leftover chanterelle mushrooms that were on sale last week.

The fish market on Roanoke Island, NC had fresh flounder filets so we'll flour them and sautéed them in butter. Steamed green beans and brown rice. Chocolate ice cream for dessert; we haven't had ice cream in two months!

We're staying in Nags Head for a week or so of repairs, re-provisioning and rest before we head to the Alligator River and the Intracoastal Waterway south.

After you posted about how you would be a week without garlic, I read an interesting article on garlic powder in the Washington Post. A little envelope of that would be easy to store and would be a good backup to running out of garlic.

I have garlic powder but didn't use it much. Then I read the article and decided I'd make better use of it.

The following month, one reader said he thought it went bad easily. So if you do take some on trips with you, you might want to put the remainder in your freezer. I think I'll be keeping mine in its bottle but also in a freezer storage bag.

We got to Wanchese Saturday night and went shopping on Sunday at a local Food Lion. Fantastic selections but it was great to get some critical supplies like garlic and coffee creamer!

sauteed garlic-infused Zucchini...for dessert a pumpkin low carb pumpkin mug cake with pumpkin whipped cream.

used a Dole chopped salad mix, Southwest style with creamy onion dressing, added a bunch of tomatoes and a few pecans and the diced up chicken breast.

It was YUMMY

I had a small portion of some left over spare ribs and stewed apples
Cheeses (Swiss and very sharp cheddar) with olive oil and black pepper Triscuits
Black grapes and a banana

I'm not sure what next.
