Roasted vegetable soup: the veggies were roasted last night in a convection oven and are Brussels sprouts, carrots, corn, onion, broccoli, asparagus, yellow pepper, and garlic.
The plan is to mix this with a little heavy cream, chicken broth, and lots of herbs. Needless to say, flavor additives like Better than Bouillon's Roasted Garlic and maybe a teaspoon of their chicken, too.
Lots of herbs, which I'll harvest on my trip to the greenhouse at one of my schools. I am excited about seeing whether my greenhouse plants that I covered survived the cold spell we just had. So many of my plants didn't, but these were covered with plant covers that give an additional 20 degrees of protection. I also have microgreens which are doing very nicely in all that sun. I'll cut more sage, chives, cilantro, and thyme. Always are great in soup.
To go with the soup, I have pumpernickle rolls. Turkey-provolone sandwich on that.
Also lettuce salad, which BTW, I flipped out last night when I stopped at the Korean greengrocer. His prices: romaine: $5.79 a head.
Red leaf: $4.99. When I asked why I got some kind of answer that made no sense. Consequently I will have to be happy with the bibb lettuce I purchased quite reasonably for $1.59 a head at another greengrocer. I also have a smidgen of red tip left and plenty of arugula to add a little zap.
But I'm kind of concerned about lettuce. WF didn't have anything when I stopped by on Sunday. Another place was also out of red leaf. 'Dunno what's going on, if anything. Might just be "Thanksgiving," even though most holiday cooks don't serve tossed greens at TG dinner.
I made Bengal spice tea and combined it with Tazo wild sweet orange. That's dessert, maybe with some berries and Greek yogurt.

(9,966 posts)Husband had to go to Louisa, VA for a meeting and was going to the gym from there so we agreed to eat up leftovers in order to clear out the fridge. We had supper at Texas Roadhouse Sunday after the basketball game, so I brought home the rest of my beef tips, loaded mashed potatoes, and green beans and will eat that for supper tonight. It was really good but there was so MUCH!

(36,281 posts)The slaw is chilling and the cod fillets are defrosting. Thinking I might make a few hush puppies too. The Ms doesn't like them but I sure do!
