a few years ago I made a large batch of cranberry sauce, which no one but me seems to really like. I had quite a bit leftover, so I decided to use it in muffins. I used a recipe for blueberry muffins, and because the cranberries already had a lot of sugar didn't add any more. Came out great - and they freeze well.
OTOH, the suggestion to take your leftover stuffing, beans, sweet potatoes, and whatever else, mix them with an egg or two and try to make a new batch of muffins was not a success.
Now I'm looking for ideas on what to do with leftover sweet potatoes that isn't a pie.

(4,296 posts)Mash them with a fork, whip them with an electric mixer. Pause, unplug the mixer, and rinse the tiny strings out of the mixer blades. Add a small amount of butter, plug the mixer back in, and whip them again. This is how I usually fix sweet potatoes.

(13,186 posts)mash the sweet potatoes & mix with mashed white potatoes and enough stuffing and gravy for it to taste somewhat thanksgiving-y
Add some AP flour and roll into balls then flatten to about 3/4 inches thick
moisten or use egg wash so that you can coat with panko
deep fry until browned and heated through
Not a low calorie option, obviously but these tasted much better than when I tried mixing the same ingredients and baking in muffin tins

(55,006 posts)what kind of quantity are we talking about? you can throw them into soup or stew if they are plain or just buttered. if they are candied I would clean up the presentation and give them to a neighbor or throw them in the compost pile. I don't like candied sweet potatoes.

(22,243 posts)I make a beef stew with Jerk spices, carrots, tomatoes and sweet potatoes. Throw in a bunch of fresh spinach.
You can also make a nice vegetarian version with chick peas, black beans or red beans. The one we like best uses curry powder & garlic to season. Just before serving throw in a bunch of fresh spinach and let it wilt. Serve over rice.
