What's for Dinner, Wed., Dec. 14, 2022

Turkey wild rice soup. I didn't have turkey for TG as I had salmon. I wanted some, though, but just bought turkey breast slices so I only have a half-dozen or so servings. I'm using the usual mirepoix. It's been in the slow cooker and I'll finish it up when I get back later today.

Hahah, listening to all of you talking turkey made me want some, but listening to comments like "turkey finally gone!" made me limit my endeavor.

I'm also baking cornbread mini-loaves. I put in hot red pepper and cheddar cubes.

If I have the energy: arugula salad with vinaigrette. Cherry tomatoes, shaved Parmesan. Toasted pignolis.

Dessert: Fresh raspberries! A little dark chocolate shaved over them and a dab of whipped cream.

But the stuffing is. So making burgers and fried potatoes tonight and will continue the turkey tomorrow when I'll be able to make more stuffing. It won't be the same since it won't be in the bird (my total preference), but it beats a blank.

I'll probably bake a pumpkin pie tonight. There are only a few pizzelles left so will be making more of those when my order of anise oil arrives from LorAnn oils.

Having the usual coffee and water. (Even though it would be better if I did, I never drink anything until I'm done eating. Hard to break habit that's a carry-over from when I was a kid and we weren't allowed anything at all to drink until we'd cleaned our plates. )

There was an uncle living with them and he made the children eat their dinner in this order:meat, potato, vegetable. Then you could have something to drink.

Why this was deemed necessary is beyond me. My mother said at age 5 she finally she broke out into tears at the table and Grandma told her brother that was enough.

I added some water, and about 1/4 cup of the bitter cream. I think about 2 1/2 cups of flour. I got a nice 1 lb loaf, and it turned out very good. I'm sorry to say, I don't measure when I bake bread. et the sponge rise, then kneaded and let it rise once more before I baked it. I used a springform pan. It mounded nice, but didn't make it to the sides of the pan.

The crust turned out flaky and tender. I usually butter the crust when it comes out of the oven and cover the loaf with a slightly damp paper towel, but I didn't do that with the sourdough.

It uses 4 cups of whole wheat and 16 hours of rising. It has a nice tang. I use 2+ tbl spoons gluten.

Caraway seeds add more flavor.

I hear that brown flour is a challenge to work with. I haven't tried baking with it

I froze most of the leftover Thanksgiving turkey in 2-4 serving portions, so that's the basis of the stew, along with a serrano, jalapeno, a couple of Anaheims, and some poblano chiles, plus the last bag of frozen tomatillos from the garden.
