Dinner's star tonight

After eating up way to much on Christmas eave I went with something simple to go with the pumpkin cheese cake desert left overs.

This caramelized onion and fried spec on a Crème Fraiche with Emmenthaler. The only thing that was not a left over was the crust.

Here we have various types of spec. We can readily get the official spec as described in the above post but what we normally use is more akin to bacon. I used Bauchspec, stomach spec. You could easily use thick cut bacon for my recipe.
