4. Leftover meatloaf.

Decided at the last minute not to do the mushroom gravy last night. So we had meatloaf sandwiches on wheat buns, which will be the same as tonight. No more mashed potatoes, so making tater tots and peas.

Almost forgot: I made an ambrosia salad today, just because I hadn't had it in decades. Had to divide it in half and add the coconut and pecans to my half as husband won't eat them.

There's an Asian store in my area that has the best kimchi on earth! I always purchase a large jar and snack on it during the day.

My own invention - although I've subsequently come across published "recipes" for this. I'm sure they were using these notorious space lasers to copy my idea

The kind I get is spicy, which I like. Of course, you can always make it yourself to control the spice level.

Kim chi is made by fermenting cabbage with salt and a lot of very hot Korean pepper. Basically, a paste made from the dried peppers is rubbed on the cabbage leaves, then they're allowed to ferment. The end result is crunchy, slightly sour and tangy, and depending on the amount of chiles used, spicy hot.

We sill had quite a few different things in there leftover from meals this week, despite eating leftovers for lunches and a couple of dinners.


I think what happened is that all of the proteins we got from the food pantry came frozen. So as soon as I thawed anything, I had to cook it all. I'm used to buying a package of meat and then breaking it down into meal-sized portions before freezing (then defrosting what I need when I need it).


It's a learning process to be sure. Maybe (just maybe) I'll have it all figured out by the time the vet bill is paid and we don't have to rely on the food pantry.

They are having a progressive dinner
We did the soup course..
The parents in charge have 5;kids under 7
So we watched them while they did the dinner
A good time was had by all..
So we had potato soup n pizza.

The recipe estimated preparation time to be 90 minutes. I just put those suckers into the oven and I started at 6.

I don't know what compelled me to make this dish except that chicken breast was on sale for $1.99 a pound this week.

I didn't have ramekins, so I used the Onion Soup Bowls.

First and last time even if I love it. Just finished washing the last bowl.

and aside from the resting time for the crusts it's no where near 90 minutes! Of course it helps that I delegate the gravy to my handy sous-chef!

BTW, I'm on PST: your post here is dated 6:34, so that's pretty quick - unless you're on East Coast time

30 minutes to bake chicken breasts.

20 minutes to let them cool to cube.

15 minutes to make chicken base with all but pie shell ingredients.

15 minutes to make pie dough.

30+ minutes to let dough chill.

20 minutes to roll out dough and assemble pies.

60 minutes to bake.

30 minutes to wash bowls and utensils.

-- Saute onions, then make a roux. Add chicken broth and cream.

-- Use frozen peas and carrots

-- Use already made grocery pie crusts

-- Use rotisserie chicken

-- Bake.


Little work and tastes just fine!!

I make pot pies with leftover meat, so that cuts off almost an hour. I also don't count idle time, so that leaves out the time the dough rests and the baking time, since I could be doing something else them. And the dishwasher can do a day's worth of dishes at a time.
