What do you do with celery????

I have five favorite recipes that use celery. I don't always want to cook them all at the same time, so I'm often left with 3/4 of a bunch of celery. I need more celery recipes. What are your favorites? Just to avoid duplication, my five are....

Gumbo
Apple celery salad
Sherried tuna on rice
Potato salad

Grapes, celery stalks and leaves, red onions. White wine vinaigrette.

Apple slaw:

Apples, carrots, celery, red onion, red pepper. All diced/sliced up pretty small (I do matchstick shapes). White wine vinaigrette, again.

I love celery.

I haven't tried this yet, but I intend to try freezing raw celery the next time I buy it.

Wash, pat dry, chop, bag and freeze. You can do small amounts, or a cup or so. It breaks apart easy after freezing.

It''s actually a very nice vegetable once you get over being traumatized by ants on a log by a well meaning mother who wanted to get more veggies into you with a minimum of actual cooking.

Favorites are hummus, black olive tapenade (and green), salmon pate (good use for leftover salmon), blue cheese dip,

and the best—bloody mary swizzle stick!

Base for stews, broths etc.
Can't have a kitchen without them.

My favorite is sweet potato soup, which includes celery leaves as a garnish as well as in the soup.

Stuff with cream cheese, chopped green olive, chopped pecans (or walnut) and minced green onion.

Stuff with pub cheese (spreadable cheese) and top with toasted pecans.

Chicken salad: boned chicken (cut up and season with salt and your favorite spices. I love garam masala and a touch of cumin), chopped celery, chopped onion, chopped pecans, walnuts or almonds, and sliced green grapes or dried cranberries, chopped apple. Dress with poppyseed dressing.

Any kind of soup.

crockpot chicken, lentil soup, and turkey dressing. I love celery. It adds plenty of flavor and fiber.

(a basis of French cooking) and its Louisiana cousin, the trinity. The former is one part minced carrot, one part minced celery, and two parts minced onion, the latter switches out the carrot for bell pepper. Sautee them up, and use the results in soups, stews, whatever needs some flavor - I use a mirepoix in meatloaf. Mr. Retrograde uses a lot of celery in what he calls shrimp creole. You can sliver it and add it to stir-fries. Tonight I'm using celery to bulk out some leftovers in a pot pie. I sometimes add it to tuna or chicken salad. You can make cream of celery soup, which is tasty but since celery has those dang strings it can be a challenge to puree.

Or you could just eat it raw - this was considered fancy in the late 19th century when fresh celery was rare and expensive (not my favorite - I don't like the texture).

I can't believe no one has mentioned pimento cheese, the pate' of the South!

Weight Watchers Waldorf Salad:
Cooked chicken breast, shredded (I just use Kirkland canned chicken breast it is good!)
Chopped celery
chopped apple
walnuts
Dress it with vanilla fat free yogurt with a tablespoon of mayo.

I make my own dressing with plain yogurt, some Stevia and vanilla extract and use less mayo.
The only WW points in this dish are from the walnuts and the mayo.

and put it on any chicken stri fry I make. I like to put raw chopped green onions and celery on when I serve the hot dish. It adds a bit of crunch and color. I even add raw sliced red radishes if I have them.

If I'm done cooking with celery and I have any left, I wash it, pat it dry, chop it and freeze it in baggies. It is still good for soups, stew and dressing or stuffing.

My family has always liked celery stuffed with cream cheese, or blue cheese dip, served on the relish tray.

I use lots of different veggies, but not celery. For you, it's essential.
That's part of the fun of cooking. There are no rules about such things.

We've been ordering NE style clam chowder from a local restaurant for years. Awhile back we noticed it tasted different....and much better. We thought it might be celery. When we asked, they confirmed they recently changed their recipe to include a lot more celery.

I was never much a fan of celery before but after this experience my eyes were opened to how celery is really a good flavor enhancer. Even I, the non-cook, have been playing around with it in different things.

So there you go. New England style clam chowder, maybe most soups, can benefit from it.

from Serious Eats. My husband hates cumin, so I get to have it all over a few days. Good for tossing whatever else is in the veggie bin in also.

But after reading this thread I have a sudden craving for chicken salad with grapes.
