(22,147 posts)Today's dinner will be black bean/pineapple enchiladas with an avocado/tomato salad and some corn on the cob .

(47,675 posts)My wife gets off work at 2:30, walks home, and has to be at the do jang by 5:00 to teach the pre-school class and THEN teach the adult/juvenile class afterwards. She won't be home until 7:30. The noodles and soup thing sounds pretty good to me at the moment.

(12,253 posts)and French fries made in a completely new way ala the new issue of Bon Appetit, which is started in cold oil and cooked in three stages (never leaving the pan). You just turn up the heat after 30 minutes, cook 15 more minutes, then turn the heat up again. Makes delicious creamy-on-the-inside/crispy on the outside fries. I tried the recipe for the first time over the weekend and and ready for them again. To go on the side, a nice salad with tomato, onion, and artichoke hearts. Ah, and a demi-loaf of ciabatta bread.

(22,271 posts)is on sale this week for $2.99 a pound so I bought a couple and cut each in half -- enough to last 4-5 months. Anyway, I cooked one of the halves in the pressure cooker, baked potatos, green beans from the Farmers Market and cut-up tomatoes and Armenian cucumbers from the garden. Simple but yummy.
