What's for Dinner, Sun., Sept. 24, 2023

It is cold and rainy here. Soup would be great, I thought, and as it so happened I had all the ingredients for the perfect soup for today: vegetable-sausage-bean soup.

I even have cornbread to go with it. For the soup, I put in roasted tomatoes from the garden, sliced Napa cabbage, onion, garlic, cheddar bratwurst, carrots, celery and chicken broth.

I've got a suspense movie on that my brother recommended and I am set for the rest of the day.

My brother is in the hospital down in Little Rock, Arkansas with leukemia complications. He is out of ICU now, but not expected to live much longer. My sister in law says if I want to see him before he goes I need to make the 11 hour trip. So early Monday morning my wife and I will be leaving. We plan on traveling back on Thursday so we can get a little rest on Friday. We have a wedding and a family reunion next weekend.

It’s cold and rainy here, too, in the Catskills. Comfort food again.

This is a cardiologist’s nightmare!

Ground beef, veal and pork. In a large bowl, I mixed in a couple of whipped eggs, bread crumbs, chopped green pepper, chopped Spanish onion, 4 large green olives stuffed with pimentos, Worcestershire and hot sauces and a small can of tomato sauce.

I put a layer of the mixture in a bread pan, topped it with a thin layer of cheddar cheese then a final layer of the meat mix. The pan went in the oven for about a half hour then I poured some more tomato sauce over the loaf.

Here’s the kicker: For the last ten minutes, two slices of pre-cook bacon go on top! Killer.

It’ll be served with beef gravy, mashed potatoes and steamed spinach.

Dinkelacker beer.

Cookies and an old silent movie, “IT,” for dessert.

9. Trying to decide...

I went shopping yesterday so I have options. I made kabobs last night, an easy thing to slap together. Ate a late day meal so I have to wait until I feel hungry, that's when I start deciding what I'll have.

Customary Sunday dinner is moved to Monday due to a construction project at the house, I'm on my own for the third time since Thanksgiving last year when we started the Sunday custom. Usually I have something in mind.

We're packing up for a trip, so neither of us wants to cook and clean tonight.

it's a simple recipe - cook whatever beans you have on hand (runner beans today), add onions if you like, sausage if you're not going vegan and you have some handy, whatever greens are in the house (broccolini today - although I usually use kale). Mix together and let sit in the slow cooker for the afternoon, adding stock if you like and any flavorings it seems to call for. Fresh-baked sourdough bread (ok, it's from the store, and was baked this morning, but that's close enough)

And for dessert - peach pie. I'm trying a new crust, with some almond flour added (it's drier than usual), and adding tapioca to the filling in hopes of having it not be too runny.
