What's for Dinner, Thurs., Dec. 14, 2023

Chicken soup with matzoh balls. I made a new pot. It seems all I want is soup these days! Also a pita bread with melted provolone and blistered shishito peppers. Doing the latter in the air fryer.

I'll also make a roasted beet salad with feta cheese. Toasted pecans.

Hope I can control myself from eating cookies while I wrap presents tonight.

Pineapple peach kombucha.

Fancied up a jar of sauce with shrimp and veggies and fresh basil. It was good, if not a tad too spicy.

Ms K had lunch with a friend today, so she'll want something light for dinner. I think we have just enough panko to bread two pork cutlets, but I might add some crunchy crushed potato chip bits if I need to stretch it.

Maybe some pickled red onions and cucumbers with sesame-soy-vinegar dressing.

I made mushy peas the other day after having them in Scotland and absolutely loving them there. I did not recreate them perfectly so much of it went into the fridge.
I made an Alesi Bean Soup for lunch and then realized that perhaps… the leftover mushy peas… hmmm

So dinner was the soup enhanced with the peas, and for my husband from NJ? I added Spam.

It was a hit!

7. Pork chop

We bought this chop and it’s huge! It’s almost two inches thick and about five inches in diameter. It’s almost a small roast.

The Ladylady butterflied the meat, coated the cavity with lemon juice and cinnamon then stuffed it with thin apple slices and a spoonful of apple sauce. It’ll roast in a a pan along with red potatoes and carrot slices. Green salad on the side.
