What's for Dinner, Fri., Dec. 22, 23

I bought watercress, iceberg, and red tip lettuce. I'll pick baby arugula from the garden and microgreens, too. Red, gold, and yellow sweet pepper. Zucchini half moons, which I slice and into which I mix basil pesto. Sun dried tomatoes, which I'll rehydrate, along with blue cheese stuffed olives, black olives, and goat cheese.

Smoked salmon on rye bread with mascarpone. Shaved red onion and capers over the top. If I stop at one of my school gardens, I'll get fresh dill.

Cup of Hungarian mushroom soup.

Dessert: Cheesecake with caramel, chocolate, and pecans (turtle cheesecake). One-half slice, with dark Chinese tea.

Coconut stew with sweet potatoes, spinach, and beans
No dessert because it's Nativity Fast.

Tomorrow we're having, courtesy of my husband, a slow cooker Mediterranean Stew, also vegetarian.

Fish fillet in a whole wheat pita. Lettuce, cuke, and Newman’s Own sesame dressing. For dessert it was Greek olives and feta cheese.

My son made it. It was fun for me to see him find the recipe, procure the ingredients, and look forward to cooking it. He cooks every week night while I work. Sometimes making dinner is a chore for him, so it's great to see him enjoying it.

He stir-fried some bok choy for a side, and we had rice too.

I haven't been around much lately. Sorry about that. I've been working on Christmas presents. Only one left to finish--a scarf and it is more than half-way done. I'm sure I can finish it and wrap it tomorrow.

Then just 2 desserts to make on Sunday.
