What's for Dinner, Tues., Dec. 26, 2023

Sheet pan vegetarian meal: Baked Feta with Bell Peppers & Chickpeas

The seasoning comes from za'atar and aleppo peppers. I have to make my own chickpeas because I won't use canned. Canned beans raise your blood sugar level.

They have a whole section for people who are pre-diabetic or diabetic.

Dessert: Greek yogurt, eggnog flavor.

Kombucha is my own home brewed with ginger.

Prol'ly no dessert tonight but maybe a hot chocolate with stevia. Not entirely happy with stevia, so ehhh.

Tossed the pasta roni after 2 bites. Sliced up the bell pepper& the cherry tomatoes & added those.

I hate wasting food, but geez...SALTY

all homemade except the pasta

salad greens and tomatoes dressed w/ olive oil and lemon juice (and a sprinkle of parmesan cheese)

6. Shepherd's pie

with leftover roast leg of lamb, gravy and mashed potatoes from our Christmas dinner.

I've seen similar dishes with ground beef called shepherd's pie, but to me that is cottage pie, a real shepherd's pie has lamb.

We had an orange Slovenian wine with the pie.

There's leftover tiramisu so that will be dessert later.
