I was intrigued by the flavor combination, too. I made a few modifications to the recipe that I will link below.

Modifications: Sauteed the beef in coconut oil instead of vegetable oil. I had to use two very large (and unfortunately mild) jalapenos instead of the serranos and chopped half a large onion instead of backpacking to the grocery store for pearl onions. I also gave it a couple of squirts of sriracha near the end to make up for the lack of heat in the fresh peppers and I added in fresh green beans and the corn cut off a leftover ear of fresh corn. It was really good hearty and flavorful but not heavy. The tumeric gives it the most amazing color! I'll be doing this one again. It's so easy.

I boosted it a bit by frying in coconut oil, but I must say that the beef chunks were very tender from braising in the broth/coconut milk mixture. Happy to have leftovers tonight!

in the past five years, the tomatoes were hollow! Hollow! Have you ever seen anything like that? They looked beautiful, but not one tomato had anything in it, just like a ping pong ball LOL.

Heirloom tomatoes....my mouth is watering thinking about it.

Talk about seedless! lol

We have a 4x15 foot (ish) patch that actually tapers to a narrower point on both ends. VERY small, but it usually produces pretty well. Tomatoes, peppers and a few herbs. I loooove heirlooms.

Note to self: don't overcook the rice so it becomes a mushy mess

Once in a while, they have a special, so I will keep my fingers crossed, but it is most likely chicken wings and pot stickers.

I'm beginning to wonder if a change in climate might really be helpful. Bill's folks had moved to Florida from Ohio before he was born due to her chronic pain. It helped her a lot.

And quesadillas are always a great choice! We love them!

I've only made them once where I was truly satisfied with them and that recipe required soaking the onion rings and resting batter so it messed up a lot of dishes and was very messy. If you have a special way of making onion rings, I hope you'll share the recipe.

We usually cheat and just use a good boxed Vidalia Onion Beer Batter mix (without the beer) and Bill adds onion and garlic powder, salt and pepper to the batter.

We cut them thin, between 1/8th and 1/4 of an inch, and they are able to cook through in the time it takes for the batter to get a nice golden brown.
If you slice them too thick, they never cook through - or the batter is ovedone if you cook them longer.
Too thin and the onion disappears.

Bill also cuts the fish into bite size bits. We like crust!

We have a big family party scheduled for tomorrow. I was busy picking up some last minute groceries, cutting up fruit for a fruit tray and other prep stuff. Sometimes you just need to have a burger and today was the day!
