Looks like homemade Fish & Onion Rings (instead of chips) or some form of Chinese for us.

(12,253 posts)Beef chunks, potatoes, onion, carrot, with tumeric and coconut milk. I'm excited to try this one.

(14,889 posts)Turmeric and coconut milk sound like interesting ingredients for a roast.

(12,253 posts)I was intrigued by the flavor combination, too. I made a few modifications to the recipe that I will link below.
Modifications: Sauteed the beef in coconut oil instead of vegetable oil. I had to use two very large (and unfortunately mild) jalapenos instead of the serranos and chopped half a large onion instead of backpacking to the grocery store for pearl onions. I also gave it a couple of squirts of sriracha near the end to make up for the lack of heat in the fresh peppers and I added in fresh green beans and the corn cut off a leftover ear of fresh corn. It was really good hearty and flavorful but not heavy. The tumeric gives it the most amazing color! I'll be doing this one again. It's so easy.

(12,253 posts)I boosted it a bit by frying in coconut oil, but I must say that the beef chunks were very tender from braising in the broth/coconut milk mixture. Happy to have leftovers tonight!

(22,144 posts)stuffed peppers, corn, last night's cauliflower gratin and I guess some kind of salad, or I will lazily just slice up some tomatoes .
Lucinda
(31,170 posts)I have tomato envy - our grocers tomatoes just don't make me happy.
livetohike
(22,144 posts)in the past five years, the tomatoes were hollow! Hollow! Have you ever seen anything like that? They looked beautiful, but not one tomato had anything in it, just like a ping pong ball LOL.
Heirloom tomatoes....my mouth is watering thinking about it.
Lucinda
(31,170 posts)Talk about seedless! lol
We have a 4x15 foot (ish) patch that actually tapers to a narrower point on both ends. VERY small, but it usually produces pretty well. Tomatoes, peppers and a few herbs. I loooove heirlooms.

Lucinda, I hope you're feeling well
Lucinda
(31,170 posts)Hope yours was yummy!
Viva_La_Revolution
(28,791 posts)but the Sweet and Sour pork was perfection.
Note to self: don't overcook the rice so it becomes a mushy mess
Lucinda
(31,170 posts)Glad the Sweet and Sour Pork was good though!

(12,253 posts)was always blue cheese and I love it, love it, love it on grilled steak. Enjoy that sandwich!
Lucinda
(31,170 posts)And I looove cibatta. The onions and jalapenos sounds like a great addition too!

Once in a while, they have a special, so I will keep my fingers crossed, but it is most likely chicken wings and pot stickers.

(146,218 posts)I am thinking of making one quesadilla a pork/peach/cheese combo.
What do you think?
pinto
(106,886 posts)but I add cinnamon to almost anything. Have fun.

(31,170 posts)I'm beginning to wonder if a change in climate might really be helpful. Bill's folks had moved to Florida from Ohio before he was born due to her chronic pain. It helped her a lot.
And quesadillas are always a great choice! We love them!

(14,889 posts)eating out with a friend, (hanging head here, and not only hanging head but very, very low), I'm going to have some store bought sushi! Please don't kick me out of the Cooking and Baking Group. Sometimes a gal has to do what a gal has to do!
yellerpup
(12,253 posts)We had sushi last night.

That picture makes me very envious.
Lucinda
(31,170 posts)Don't tell anyone!
It's delicious, and I don't have to clean up the mess!
yellerpup
(12,253 posts)I've only made them once where I was truly satisfied with them and that recipe required soaking the onion rings and resting batter so it messed up a lot of dishes and was very messy. If you have a special way of making onion rings, I hope you'll share the recipe.
Lucinda
(31,170 posts)We usually cheat and just use a good boxed Vidalia Onion Beer Batter mix (without the beer) and Bill adds onion and garlic powder, salt and pepper to the batter.
We cut them thin, between 1/8th and 1/4 of an inch, and they are able to cook through in the time it takes for the batter to get a nice golden brown.
If you slice them too thick, they never cook through - or the batter is ovedone if you cook them longer.
Too thin and the onion disappears.
Bill also cuts the fish into bite size bits. We like crust!
Hope all is well with you!
yellerpup
(12,253 posts)Sounds like you have the method down! Yummmmm!

(9,791 posts)We have a big family party scheduled for tomorrow. I was busy picking up some last minute groceries, cutting up fruit for a fruit tray and other prep stuff. Sometimes you just need to have a burger and today was the day!
Lucinda
(31,170 posts)And now I want a burger and some nice cold fruit. lol
