What's for Dinner, Sat., Jan. 20, 2024

Roasted Chicken & Winter Squash over Mixed Greens. This is one of the recipes from the thread "20+ Winter Salads" I posted a day or two ago.

I already have almost everything for it, so I don't have to go out. It's 20 here. I do have to make a substitute for maple syrup: maple flavoring with agave. I also have interesting mixed greens, mostly from my garden. Here are some cute little Tatsoi greens that I'll put in:



Glad I cut them before the big freeze.

Dessert: cup of ginger tea and a few Werther's.

2. Roasted pork loin and brussels sprouts

I braised the pork and then wrapped it in foil, had it in the oven at 400 for an hour (not a big piece) and roasted the brussels sprouts for about 30 minutes. Tasty meal on a cold day.

Against my better judgment, I stopped at Cracker Barrel, lured in by the promise of fried chicken. The chicken was actually quite good, although on the salty side and probably full of trans fats. The sides were gross.

4. Rutabegas and venison

Beautiful tatsoi! Mine is still going strong also, along with Chinese cabbage, and Russian kale. Just finished a plate of mashed rutabagas and carrots with venison and fresh baked kamote whole wheat bread.

Ground venison browned in butter with onions then simmered in a little tomato sauce, red wine and thyme. Fried, shredded cabbage with a splash of apple cider vinegar and a sprinkle of brown sugar. Served over buttered, boiled potatoes and a diced apple on the side.

Game tastes better on cold nights!

tomrrow. boil in a bag , 10 min , high. frozen mixed veggies . microwaved at 6 minutes , high. throw into wuk to stir and eat.
