What's for Dinner, Sat., April 20, 2024

I only had a few of the items I prepared for last night, so tonight I will have a slice of pizza and later on some ribs with BBQ sauce. I added ricotta and herbs to the pizza, but tonight I'm going to put uncooked arugula on top. I had it this way once and it was so good, but it was from a brick oven, which mine is not.

I want to make coleslaw for later. Gotta' have those veggies!

Kombucha: orange ginger.

Dessert: chocolate frozen bar. They're small and only 70 calories. Decaf coffee.

Thin crust trying to replicate a great pizza that we used to get in Collingswood south jersey an awesome Italian restaurant. I’ would have ordered takeout but I’m 3 hours away.

11. Herbed roast chicken

But I didn't do a whole chicken. I did six thighs and two whole breasts cut in pieces, because it was for our supper and for the church potluck tomorrow. We had mashed potatoes and gravy with it, and steamed spinach with sour cream and horseradish. The spinach was from my favorite Farmers Market vendor, so it was really nice.

For the potluck I also made an asparagus salad with a lemon-dill dressing, and the Quaker Oats oatmeal cookie recipe baked as bars, with dried apricots, dried cherries, and an orange juice and powdered sugar drizzle.

Homemade white pizza on Naan topped with roasted chicken, cherry tomatoes, 5-Italian cheese mix and dried thyme.

Lemon water and for later…a few Myer’s lemon cookie thins
