What's for Dinner, Sun., Aug. 4, 2024

Stuffed green peppers in the slow cooker. All homegrown peppers. Ground beef (grass fed) and chopped vegetables plus grated cheddar cheese in the stuffing.

Pineapple kombucha.

For dessert: soft serve ice cream with miniature peanut butter cups.

Thanks for the well-wishes yesterday, my stomach problem has cleared up (air bubbles, I am pretty sure) and we are a go for noodle kugel tonight!

My family makes a savory lokshen kugel w/out the raisins and cinnamon. I think it makes a better side that way.

And it is not a side, we have it for dinner... My SO's mom made it all the time. Smells good and we like it this way! (We have a lot of supposed "side dishes" for dinner...go figure.)

2. Another birthday party

We’re going to a surprise birthday party for a friend who is a successful opera composer. It’s being hosted by another friend whose apartment overlooks Central Park. She is having the evening catered. I’ll post the goodies later.

I’m so lucky to have my life! Gratitude doesn’t get close to how I feel.

7. Italian Stuffed peppers, two ways.

I learned two kinds.
1. Ricotta, mainly, and cooked with tomato sauce. (Don't let them leak Ricotta) , and
2. Cubanelle peppers with bresdcrumb filling.

I still have some peppers left over to stuff. That last one with the tomato sauce is prol'ly gonna' be it, but I'm bookmarking all four links.

The thing that's so great about stuffed peppers is that they are so good in the heat, especially after the flavors blend in the 'frig overnight. I like getting just one out for a "mini-meal," which is my preferred way of dining these days. Having it cold on these hot days.

I think, though, that instead of pre-baking them in the oven I will try the microwave. I'm going to put them in a large pie dish and hope to save some of the juices to mix back into the peppers when I stuff them. Trying to avoid the oven in this heat.

I used to salt the inside of them and also rub them with garlic, then brush or spray olive oil on them. That always worked out well in the oven, and then stuffing them after the baked a bit.

Whenever I do this, I like to stroll by the prepared food counter at Whole Foods and notice their prices on them. Like $9 each. Of course they are giant peppers, but $9 each?

Much easier for the Cubanelle ones than the bell peppers.

I once jammed a bunch of bell peppers into a 2 quart saucepan, and gave them tomato sauce in between.

Like this.



Use whatever stuffing works for you. I do remember ricotta, egg, some breadcrumbs as a binder and some parsley etc.

Your choice.

I'll look in my Paprika app. I use the old version. They want more money for the new one.

and dry sauce with chicken, pepperoni, and sausage, with fresh shredded Mozarella.

Peaches and cream for dessert.
