What's for Dinner, Thurs., June 12, 2025

Eggplant-chipotle sandwich.

I invented this recipe: breaded eggplant slice, dipped in egg, then panko, then to the air fryer.
Next up is the mozzarella--thick slice of this, and on top chipotle mayonnaise. I like to use pita bread if I'm dining light, or marble rye otherwise. Melt it all in the air fryer.

Cold bratwurst on the side. Dill-mustard.

Chilled creamy cauliflower soup with leeks and fennel seed. I made the leek broth a few weeks ago, so I just add my cauliflower, already cooked, and puree it. Add fennel seeds, which I saved from last year. A drizle of olive oil over the top, along with coarsely ground black pepper.

Can you tell it's hot here?

Kombucha: mix of ginger beer, kombucha, and cherry juice.

Dessert: Watermelon.

My dinner is not as inventive as yours. It’s so hot today I’m not feeling very creative.

I’m going to grill seasoned chicken breast, cut into strips, then add to a salad of mixed greens from my garden, tomato slices, cucumber, red onion,hard boiled egg, then add chicken, then fresh mozzarella, finally French fries on top (Pittsburgh style salad). I like mine with Ranch that I make from the Budget Bytes web site.

Ice cream for the guys.

2. garlic pinwheels, celery sticks

I made garlicky cream cheese to spread on wraps, added some chopped onion and celery, shredded sharp cheddar, and some chopped turkey. Rolled the wraps up and sliced into pinwheels. I cut the extra celery into sticks.

From a pantry jar. Tabasco and green onion on top. Applesauce, also from a pantry jar, for dessert.

It's my last red bean pint, so I'll have to make another big batch in 2-3 weeks. It's very convenient on a late night.

Went to a restaurant and ordered one of the few vegan offerings and was pleasantly surprised at how tasty this dish was, considering it wasn’t an Asian restaurant. Coconut milk based veggie broth, noodles, charred broccolini, mushrooms, snow peas, scallions, red bell pepper, and crispy tofu. Delicious alternative to traditional ramen. Cheers! 🥂
