3. Leek & Potato Soup.

Whole wheat 18-hour loaf and salad. I'm still stocking easy to eat meals for my neighbor who is having three more teeth extracted tomorrow morning. With this soup, I'll have piled up 2 meals of butternut-apple soup, one potatoes and gravy microwave meal that includes a baby lamb chop she can nibble, and today's leek & potato soup will make 5 meals. Can't wait for tomorrow night's debate! We'll probably just do leftovers, but I may get inspired.

Another note: Discovered making microwave popcorn from regular popcorn in a plain, brown paper lunch bag. Recipe: 1 lunch bag, 1/3 C. popcorn, fold top of bag twice and place in the microwave on high for 3 minutes, but don't go away! Mine was done in 2 min. and 19 seconds! Add salt (and/or other seasonings or cheese) immediately while the corn is still hot (if you are adding salt). Easy, quick, and cheap!!!

You are a sweetheart for caring for your neighbor like that.

The popcorn method is something I'll try.

Today I talked to a student who had been out for a week and a half. The reason? Food poisoning from that popcorn contamination that was announced a couple weeks ago. It was the already bagged popcorn.

Best to make your own!

I can't wait for the debates, either!!

Nothing fancy, just things I would appreciate if our situations were reversed--not that I'd expect it if it were.

I really worry about the additives in food, not for myself, but for kids who have been raised on take-out. Microwave popcorn is really dangerous. The recipe also points out that the printing inks on the prepared packets create a toxic atmosphere. Sorry that your student suffered for a week and a half over food poisoning, but grateful he survived.

The debates are going to rock!

Going to par-boil the potato, slice & dry. Slice the chard and make it a one pan, quick meal.

Its in the crockpot now

black beans
diced tomatoes
green chiles
cream cheese
corn
cubed fake chicken
cumin, oregano, chili powder

with rice and tortillas. First time trying this recipe so fingers are crossed

I roasted two pans of cherry tomatoes and a tray of Brussels sprouts and yellow and red peppers.

And some chicken kabobs.

I like to serve the dish like this: a little nibble of chicken, a small piece of ricotta salada, and a bit of roasted pepper. Yum! This may very well be my favorite dish.

DH has gone to Florida to visit his sister so I'm dogging it all week. My daughter and I are eating take-out and making stuff that she and I like that DH doesn't.
