(12,254 posts)that just knocked me out when I first tried it. Toss sweet potato chunks w/olive oil and roast in the oven at 375, turning once, until caramelized on both sides. In the meantime, toast a handful of pumpkin seeds (or whatever you have walnuts, pecans, etc) and soak dried cranberries in water to cover while you stir up the dressing. The dressing is lime (any citrus) 1/4 C., and maple syrup which you should start with 2 tablespoons and add to taste and a pinch of cinnamon, then give it good grinding of black pepper and a pinch of cayenne pepper . When you remove the sweet potatoes from the oven, salt them immediately if using salt, let cool a for a few minutes then toss with the dressing and cranberries. Sprinkle with toasted pumpkin seeds just before serving. Feel free to experiment with this recipe. I adapted it from one that went with mandarin oranges, sultanas, and pecan for the native foods buffet I did for the Eagle Project fundraiser.

(22,165 posts)Nothing special here.....we're having White Pizza on pita bread with Alouette cheese, sauteed zucchini and onions and topped with Asiago cheese, a salad and some leftover grape leaves.

(12,254 posts)I am excited to be adding dairy back into my diet--I've been trying different products and now I have found that I can tolerate goat's milk as well as goat yogurt. Then, I found goat gruyere and goat brie. Happy face, happy dance, me! A taste of cheese again at long last!

(22,165 posts)doesn't affect me. Other than chevre, I've never seen/had goat gruyere or brie. I'll bet it tastes great .

(12,254 posts)I can't do soy because I take thyroid medication (39 years) and soy is kryptonite to thyroid meds. You must wait 12 hours after taking your pill before you can have soy, and then you have to wait another 12 hours after you eat before you take thyroid again. That pushes your mealtime back an hour a day! I have been using almond milk, which is fine but not rich the way goat milk is.

(37,549 posts)Butternut Squash Red Lentil--
1 butternut squash, peeled, de seeded, cut thinly
14-16oz of red lentils
2 onions, 1 inch of fresh ginger, 4 garlic cloves, whirred together in a food processor 'til fine.
2 cans light coconut milk
Patak's curry paste. Cumin, Coriander, Turmeric. Amounts are up to you.
2 14oz cans of fire roasted tomatoes (rotel or trader joe's)
4-6 cups of broth--chicken, or make vegan with vegetable
Cayenne to taste.
Microwave the onion mix with the spices for 5 minutes, stirring halfway through. Put that and all the rest of the ingredients in a crockpot ---start with 4 cups broth. If you have room, put the rest.
Set on High for at least 4 hrs, low for six. This is done when the squash and lentils are soft. Puree with a blender wand or in a blender--it is a lovely shade of orange. I only added black pepper, no salt, because I think the canned stuff and the curry paste have enough salt, but you should add to taste. Serve with croutons dusted with curry powder.
Sweet and Spicy, and delish.

Roasted cherry tomatoes with ricotta salada.
I had a long day at work and this was nice to come home to.

I bet your plate was a pretty as it was delicious. Pork pairs with fruit better than any other meat, IMO. Never tried it with cooked mango, but I'm sure it made your pork roast soar.
