What's for Dinner, Sat., July 19, 2025

Tomato pomegranate salad. It has different kinds of tomatoes, from cherry to plum, and a dressing with garlic, pomegranate molasses, and olive oil. Red pepper and red onion, too.

I'm going to try an eggplant recipe, too, but I probably won't finish that until tomorrow.

Apple blossonm for dessert (TJ's--apple wrapped in pastry).

Kombucha: blueberry gnger.

toast, mayo, thick slice of tomato, bacon, cheese - heat til the cheese melts. With the corn, a quintessential summer meal.

Easy too, which is good, because I cooked for tomorrow's potluck. Chicken and wild rice casserole, caprese salad, a peach cake ( the NYT plum torte recipe, but with peaches): https://cooking.nytimes.com/recipes/3783-original-plum-torte?unlocked_article_code=1.Xk8.g5tn.QeAx8oGDLhjm&smid=share-url

First course is yellow squash from the garden - it was sliced, seasoned and cooked over charcoal yesterday by TJ
Next is a bowl of watermelon cubes
Then either a mini burger or a sloppy joe
Dessert will be low carb vanilla ice cream with blueberries

If I need a snack I'll have roasted pepper hummus scooped up with vegetables.

To drink I've opened a bottle of pale ale actually a Lager.

I've exercised willpower and ignored the shells and cheese! (so far)

TJ is sleeping before her night shift and the Duckster loves a good nap so I'm alone at the moment.

Making a single pot steamed meal in our camping trailer. Field Roast Apple-Sage sausages, broccoli florets and thinly sliced red potatoes. I’m steaming the potatoes until almost done and then adding the broccoli and sausages because they don’t take long to cook. I’m mixing the broccoli with a bit of evoo and Dijon mustard. Apple pie for dessert. Cheers! 🥂
