What's for Dinner, Wed., Oct. 22, 2025

Baked block of feta cheese with roasted peppers and tomatoes. Lots of herbs and olive oil. I've made this before; it's one of my favorite recipes!

Kombucha: Blueberry ginger.

Dessert: Light vanilla ice cream with a sauce I made with ginger, kiwi fruit, and pineapple.

features rice vermicelli noodles tossed with tangy tamarind-chili sauce, surrounded by edamame, shredded cabbage, sweet corn, and crisp carrots. A scatter of fresh cilantro adds brightness. It’s served with Chef's sweet chili vinaigrette—a punchy, dressing made with agave syrup, cider vinegar, and Dijon mustard.

We'll see.

5. Red Lentil Vegetable Soup.

Besides organic red lentils the other ingredients included: chopped onion, celery, cabbage, leeks, red bell pepper, sliced carrots, mushrooms, zucchini, peas, and minced garlic. I added red pepper flakes and chopped fresh parsley at the end. Cheers!🥂
