Made red velvet cupcakes today

It's been forever since I had red velvet cake but wanted to give this a try.

They taste just way I remember.

Red Velvet is my favorite cake. I like it with chocolate frosting also. Can't decide which is better.

in the recipe I used, which is from America's Test Kitchen

I don't think I've ever seen a recipe for red velvet cake that didn't call for chocolate.

It's not considered a "chocolate" cake. I think the cocoa is to aide in giving it its color.

They're quite good.

Here's the funny thing: For years I've said red velvet is my favorite cake, but it turns out that I really don't have it very often and since learning my mom's chocolate cake recipe, my mom's cake wins--no contest.

However, this might be the most expensive cake (well, cupcakes) I've ever made.

3.5 sticks of butter
16 ounces of cream cheese

Alan likes to joke that I'm trying to kill him w/ all the baking I do (he's diabetic). Yesterday I joked that if I don't kill him I may put him in the poor house.
