Cinnamon Streusel Coffee Cake

SERVES 6 TO 8 /
PREP TIME: 20 MINUTES /
COOK TIME: 45 MINUTES / CAST
IRON: 12-INCH SKILLET


Christmas morning with my mom’s family is an exquisite affair.
Everyone rushes down the stairs to begin the slow gift-opening ritual,
the grown-ups sipping coffee and Southern Comfort while nibbling
warm slices of Grammy’s coffee cake. Later in the day comes a big,
multicourse meal. The morning, however, is always my favorite part; I
can’t think of a more fitting dish to start the festivities with than coffee
cake.

FOR THE FILLING

1½ cups packed brown sugar
1 cup chopped pecans
½ cup all-purpose flour
½ cup (1 stick) salted butter, at room temperature
2 tablespoons ground cinnamon
1 tablespoon ground ginger
1 tablespoon ground cloves

FOR THE CAKE

3 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon sea salt
1 cup (2 sticks) salted butter, at room temperature
1 cup granulated sugar
1 teaspoon vanilla extract
3 eggs
1½ cups whole milk

TO MAKE THE FILLING

In a medium bowl, stir together the brown sugar, pecans, flour, butter,
cinnamon, ginger, and cloves. Set aside.

TO MAKE THE CAKE

1. Preheat the oven to 350°F.

2. In a medium bowl, mix the flour, baking powder, and sea salt.

3. In a large bowl, with a wooden spoon or hand mixer, cream together the
butter and granulated sugar until light and fluffy. Stir in the vanilla, then
add the eggs one at a time, stirring well after each addition.

4. Add the flour mixture and the milk, alternately in thirds, to the butter
mixture, stirring well after each addition, until completely combined.

5. Pour half the batter into the skillet. Top with half the filling. Layer the
remaining batter on top. Crumble the remaining filling evenly over the
top.

6. Bake for 40 to 45 minutes, or until cooked through. Serve hot with a cup
of coffee (Southern Comfort optional).
