*LO-CARB* Continues With 4 MEAT DISHES: Chicken, Turkey, Pork & Lamb! 🌞

Chicken Paprikash

Making my Paprikash with real sour cream is one of the great joys of
low-carbing!

3 tablespoons butter
1 cut-up broiler-fryer
1 small onion
2 tablespoons paprika
1/2 cup chicken broth
1 cup sour cream
Salt or Vege-Sal and pepper

1. Melt the butter in a heavy skillet, and brown the chicken and
onions over medium-high heat.

2. In a separate bowl, stir the paprika into the chicken broth.
Pour the mixture over the chicken .

3. Cover the skillet, turn the burner to low, and let it simmer for
30 to 45 minutes.

4. When the chicken is tender and cooked through, remove it from
the skillet and put it on a serving platter. Stir the sour cream into the
liquid left in the pan, and stir until smooth and well blended. Heat
through, but do not let it boil, or it will curdle. Salt and pepper to taste,
and serve this gravy with the chicken.

Yield: 4 servings, each with 7 grams of carbohydrates and 1 gram of
fiber, for a total of 6 grams of usable carbs and 53 grams of protein.

Low-Carb Microwave Pasticchio

This has become my sister's standby recipe for potlucks and other
casserole occasions.

Pasticchio

1/2 medium onion, chopped
1 clove garlic, crushed
1 pound ground turkey
3/4 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
1 cup ricotta cheese
1/4 cup chopped fresh parsley
1/4 teaspoon salt or Vege-Sal
1/8 teaspoon pepper

Sauce

2 tablespoons butter
1/2 teaspoon salt or Vege-Sal
1 1/2 cups heavy cream
1/2 cup Parmesan cheese
2 cups cooked spaghetti squash

1. In a microwave-safe casserole, combine the onion and garlic;
place the turkey on top. Microwave this, uncovered, for 5 minutes
at full power. Stir it up a bit, breaking up the ground turkey in the
process. Microwave the turkey and onion mixture for another 3
minutes, or until the turkey is done through.

2. Break up the turkey some more-you want it well crumbled-and
drain off the fat. Stir in the cinnamon and nutmeg, and microwave
it for just another minute, to blend the flavors. Transfer the turkey
mixture to a bowl.

3. In a separate bowl, combine the ricotta cheese, parsley, and salt and pepper.

4. In yet another bowl or a measuring cup (okay, you need both a
microwave and a dishwasher for this to be a convenient recipe!)
combine the butter, sauce, cream, and cheese to make the sauce.

5. Spray your microwave-safe casserole with nonstick cooking spray.
In the dish, layer half of the spaghetti squash, then half the turkey
mixture, then half the ricotta mixture, then half the sauce. Repeat the
layers, ending with the sauce.

6. Microwave the pasticchio at full power for 6 to 8 minutes, or until
it's bubbly and hot clear through. Let it sit for 5 minutes or so, and serve.

Yield: 6 servings, each with 7 grams of carbohydrates, a trace of fiber,
and 22 grams of protein.

Looed Pork

This is a great way to add a lot of flavor to the usually bland boneless
pork loin.

1 1/2 pounds boneless pork loin, sliced about 1 1/2 inch thick
1 batch Looing Sauce**
Scallions, sliced
Toasted sesame oil

1. Put the pork in a slow cooker, pour the looing sauce over it, cover the
cooker, and set it to Low. Forget about it for 8 to 9 hours.

2. At dinnertime, remove the pieces of pork from the looing sauce.
Put each piece on a serving plate, scatter a few sliced scallions over
each serving, and top with a few drops of toasted sesame oil.

Yield: 4 generous servings with no more than 1 gram of carbohydrates,
no fiber, and 35 grams of protein.

**Looing Sauce

This is a Chinese sauce for "red cooking." You stew things
in it, and it imparts a wonderful flavor to just about any sort
of meat.

2 cups soy sauce
1 star anise
1/2 cup dry sherry (the cheap stuff is fine) (Ed. Note: Don't buy "Cooking Sherry!)
4 tablespoons Splenda
1 tablespoon grated fresh ginger
4 cups water

~ Star anise is available in Oriental markets, and my health
food store carries it, too. It actually does look like a star, and
it's essential to the recipe. Don't try to substitute regular anise.

Combine the ingredients well and use the mixture to stew
things in. After using Looing Sauce, you can strain it and
refrigerate or freeze it to use again, if you like.

Yield: 6 1/2 cups of looing sauce, or plenty to submerge your
food in. In the whole batch there are about 50 grams of usable
carbohydrates, but only a very small amount of that is transferred
to the foods you stew in it.

Winter Night Lamb Stew

On a raw winter's night, sometimes you just want stew. Here's one with
no potatoes, and you can make it in your big skillet.

3 tablespoons olive oil
1 1/2 pounds lean lamb stew meat, cut into chunks
1 cup chopped onion
1 1/2 cup diced turnip
1 1/2 cup diced rutabaga
3/4 cup beef broth
1/2 teaspoon guar or xanthan
1/2 teaspoon salt or Vege-Sal
1/4 teaspoon pepper
1 bay leaf
3 cloves garlic, crushed

1. Put the oil in a heavy skillet over medium-high heat, and brown
the lamb in the oil. Add the onion, turnip, and rutabaga .

2. Put the beef broth and guar in a blender, and blend for a few moments.
Pour the mixture into the skillet. (If you choose not to use a thickener,
just add the broth directly to the skillet.) Add the salt, pepper, bay leaf,
and garlic, and stir.

3. (over, turn the burner to low, and let simmer for 1 hour.

Yield: 4 servings, each with 12 grams of carbohydrates and 3 grams
of fiber, for a total of 9 grams of usable carbs and 38 grams of protein.
