Quinoa with Vegetables

Cooking Time: 4-6 hours
Ideal slow cooker size: 3-qt.
2 cups quinoa
4 cups vegetable stock
1 Tbsp. olive oll
1 medium red pepper, chopped
1 medium yellow pepper, chopped
1 medium carrot
3 garlic cloves, minced
1/2 tsp. pepper
1 Tbsp. fresh cilantro chopped
1. Place quinoa, vegetable stock, onion, olive oil, red pepper,
yellow pepper, carrot, garlic, salt, and pepper into crock and stir.
2. Cook on low for 4-6 hours or until liquid is absorbed and quinoa is tender.

Chipotle Navy Bean Soup

1 1/2 cups dried navy beans, soaked overnight
1 onion, chopped
1 dried chipotle chili, soaked 10-15 water. minutes in cold water
1-2 tsp. salt
2 cups canned tomatoes with juice
1. Drain soaked beans.
2. Add to slow cooker with onion, chili, and water
3 Cover and cook on low for 8 hours until beans are creamy.
4. Add salt and tomatoes.
5. Use an immersion blender to puree soup.

Autumn Sweet Potatoes

4 medium sweet potatoes, peeled sliced thinly
1 large Granny Smith apple, peeled and diced
zest and juice of 1/2 orange
1/2 cup raisins
2 tbsp. maple syrup
toasted, chopped walnuts, for serving, optional
1. Place sweet potatoes in lightly greased slow cooker.
2. Top with apples, raisins, and orange zest. Drizzle with
maple syrup and orange juice.
3. Cover and cook on high for 2~3 hours or until sweet
potatoes are tender. Serve sprinkled with walnuts if you wish.

24 oz. boneless skinless chicken, cut thin
3 cups canned pumpkin puree
2 cups chickpeas
3 cups mushrooms
1 1/2 cups gluten-free low-sodium chicken broth
1 1/2 cups plain non-fat Greek yogurt
salt to taste
pepper to taste
cinnamon to taste
red pepper and chili powder
to taste, if desired
1. Add all ingredients to slow cooker.
2. Cook on high 3-4 hours or low 6-8.
