Now I have a bunch of duck and goose fat.

Did Thanksgiving dinner last night. Goose, potatoes, carrots, and mac and cheese. Pumpkin pie for dessert.
What to do?
Goose tacos will get rid of 5 tablespoons for the tortillas.
Looks like confit du canard is on the menue soon.

But I'm trying to reduce some calories. I did put a tablespoon of fat into my pan fries potatoes the other day. It made a big difference.

Fat is extremely important to one's diet.

The idea that fat is bad is just plain WRONG.

Tiny amounts of either are literally FLAVOR BOMBS
which will elevate any number of dishes, just like "Better than Bouillon"!
