What's for Dinner, Fri., Jan. 16, 2026

Long union meeting. I could have stayed for the dinner buffet but decided to come home.

I had a Philadelphia cheesesteak for lunch, though. Onion rings. Oh, and the best part! They had Oreo cookie milkshakes for dessert!

I'm making a salad for tonight.

Ms K is having leftover mussels in garlic butter and white wine from last night, with leftover rice and broccoli. I'm gonna have noodles with soy sauce, peanut-butter, chili crisp, and scallions, along with a couple pork bao from the freezer. I'll make a fresh garden salad to share.

leftover baked/roasted pork chops, half a large can of green chile enchilada sauce, 3 roasted and chopped poblanos.

smells good in here after doing the chiles.

Broiled pink salmon with horseradish sauce, steamed broccoli with mushrooms and air-fried sweet potato nuggets. Chia pudding for dessert. Cheers!🥂

The enchies are filled with a little chorizo and some cheese. The sauce is Suiza - salsa verde cut with crema, if you have it, and topped with more cheese. No crema, but I had not quite enough sour cream and a 1" cube of dried-out cream cheese to use up, so that went in instead. They're baking now, and the sauce tastes good.

No waste.
