What's for Dinner, Tues., Jan. 20, 2025

Roasted Red Pepper Soup with Roasted Garbanzos.

I cooked the garbanzos in the slow cooker last night and they turned out perfect! Now I just have to season them and get a nice brown finish from the roasting process. I will mix them with olive oil, garlic, and black pepper.

The red peppers are roasting in the air fryer now.

Other ingredients in this soup are veg. broth, chipotle peppers, Yukon golds, fire-roasted tomatoes, and lotsa' herbs: parsley, thyme, and oregano. Garlic and onion, of course.

Corn muffins to go with the soup.

Kombucha: Elderflower.

Dessert: My brother gave me some Stern's sugar-free pastries. They are unbelievable. You'd never think they were no-sugar. They are a cross between a croissant and a cannoli. Will have this with decaf coffee.

1. Chicken stew and dumplings

I cooked some dark meat chicken till it was falling off the bones. I added some onion, garlic and carrots to the broth and let them cook, tossed in a few left-over green beans, then got the chicken off the bones, added to the broth. I made my good old fluff dumplings and let them cook on top, Haven't had the dumplings for a long time. Perfect for the weather

That is sold as sugar free. That may not strictly speaking be accurate ;-/.
But well..it is probably still healthier than refined sugar.

kind of leaning meatloaf even though it means opening another pkg of bacon for the top (should have saved 2 or 3 slices last night, darn it!)

edit: cooked it up loose with cumin and such for the meat portion of nachos
tortilla chips, meat cheese, canned black beans, niked then onions, tomatoes, el pato

Steam- fried in evoo and veggie broth: chopped onion, yellow bell pepper, broccoli florets, sliced mushrooms and minced garlic. When done I added some Miyoko’s butter, oregano, basil and red pepper flakes. I stirred in cooked farro wheat and after plating topped the dish with chopped Beyond Italian sausage and vegan parm. Cheers!🥂
