I made up my own soup recipe for tonight. Using my chicken stock, I made vegetable soup. To go with it, I toasted some artisan rolls.
Added to the stock were carrots, chickpeas, sliced Napa cabbage, and diced yellow squash. I also added a few Beyond sausage crumbles.
Over the top I'll put parmesan and fennel seed. I tasted it and it's good!
If this isn't enough, I might make a stuffed pepper later.
Dessert: Apple blossom with Greek yogurt. Decaf coffee.

(78,744 posts)I tried something new: sauteed turkey burger with bok choy & napa cabbage & garlic & onion. Added low salt soy sauce.
A bit bland, but filling.

(36,970 posts)It's one of K's guilty pleasures, hamburger tacos seasoned out of a packet, shoveled into clam-shaped crispy taco shells and topped with grated yellow cheese, etc. I'm happy to oblige!

(1,839 posts)My version of the swanky ski resorts famous white turkey chili comes really close without using animal foods. I used Miyokos vegan butter for the roux, oat milk substituted for the cream and crispy tofu was used instead of turkey. Onions, red bell and green pepper, sweet corn and black beans are also part of the dish thats seasoned with cumin, parsley, cayenne and garnished with fresh chopped cilantro. Cheers!🥂
