What's for Dinner, Wed., Feb. 18, 2026

Sheet pan salmon and tomatoes. It's seasoned with cumin and coriander seeds. I'm using cherry tomatoes. Scallions, olive oil.

After it's baked, the recipe suggests putting it in naan bread with either baby kale or baby arugula. I'm going with the latter.

The recipe is from The Protein Playbook by Liz Baker.

It's easy, too. I need easy today because I have my contractor coming to remove a half-size professional refrigerator that is too wide for the door. He has to remove the trim on the doorways.

Kombucha: unflavored.

Dessert: Earl Grey decaf and almond biscotti. Maybe tapioca pudding.

We’ve got a batch of legs marinating in olive oil, spices and white wine. I’ll grill those on our electric grill, (no propane allowed in our building). Yellow rice and black beans as well as a tomato/cucumber/onion salad. Chocolate ice cream.

Ducky's best human buddy is coming to dinner. Shh..., we haven't told Ducky. The last time he arrived Ducky's rapid zoomies covered two rooms, the hall and some of the furniture.

Honey glazed spiral ham
Macaroni and cheese
Green beans
Baked beans
Coleslaw
Dinner rolls baked from frozen dough
Apple crumble with vanilla ice cream or maybe not

Significant leftovers will depart with our guest. He lives in our old apartment after we moved into the house just in front. During the COVID shut down we handed him prepared food out the back door as he is not much into cooking meals and the restaurants and delis were closed. Now we are out in the country and visits are all too infrequent.

... and I will enjoy it just as much as I did last night.

It's one of those things I can only make in large quantities.

Made a pot of green lentils that I cooked in veggie broth, tomato paste, minced onion and garlic. I use less liquid than required to make a thicker concoction and I stir in Carolina style barbecue sauce when the lentils are done. They look kind of fancy on a plate because, due to their thick consistency, you can use a cup or bowl as a mold ,After unmolding on a plate I drizzle on more barbecue sauce. Also made steamed brussel sprouts mixed with brown rice seasoned with vegan butter and fresh lemon juice as a side. Cheers!🥂
