What's for Dinner, Sat., March 21, 2026

First day of spring? Nope. It was yesterday at 10:46 a.m., according the Farmer's Almanac.

I am having a "spring meal": Salmon and asparagus with scallion and quinoa. The salmon has brown sugar basted on top. I do the brown sugar after I poach it with lemon and orange. Black pepper, too. I use the air fryer to get the glaze.

Kombucha: Pineapple ginger.

Dessert: Strawberry shortcake.

p.s. Yesterday I posted a pic of my roasted peppers and feta cheese dish. I don't think many people saw it, though, because I posted it late.

It’s been a revoltingly long time since I’ve made it, and I realized my son kind of took over the dinner duties since he’s been looking for work. A little peeved I can’t put mushrooms in (he thinks he hates them), but I only have dried morels and I hate to have to powder them just to fool him.

Just threw everything else in there, though: olive oil, tomato paste, Better Than Boullion (veg), half the spices on the rack, pepperoncini, diced carrots and celery, and a couple big scoops of TVP (basically ground “burger”). Will let him choose the pasta (pick bucatini!)

Figure I’ll throw together some bread dough and make WW bread sticks for sopping up the excess.

My wife wanted pizza for her birthday and so it was. I made a whole wheat crust from scratch based on a recipe I’ve used in the past. Toppings were jarred sauce (from a local vender), vegan cheese, mushrooms, red onion, black olives and eggplant. Tomorrow, we’re going out with family to a Chinese Restaurant to celebrate it a second time. Cheers!🥂

Green beans with lamb and tomato sauce, baba ganoush and tabouli with flatbread. It was delicious.
