What's for Dinner, Tues., March 31, 2026

Appetizer: Multi-grain crackers with mayo and cold slices of mackerel.

Salad: Tossed greens with baby arugula. Shrimp, sauteed in butter and aleppo pepper. Avocado and cucumber, red onion, grated carrots, cherry tomatoes. French vinaigrette, homemade.

Main course: Grilled tuna steak with garlic and herbs (thyme, basil).

Dessert: Vanilla ice cream with toasted banana nut bread croutons and walnuts. Decaf coffee.

I'm having a rare weeknight evening out with my wife and friends at a local institution, Edo's Squid. Amazing Italian fare.
Will probably split the pasta carbonara and the sesame crusted seared tuna steak.

Spiral ham (honey glazed)
Baked sweet potatoes
Pasta - Shells and cheese from a box
Stewed apples from fresh
Yeast dinner rolls from frozen dough balls.

A very low effort meal to put together.

Ducky's best buddy is coming over and he usually figures it out, but not this time. I think he listens to us (when he wants to) and figures it out. We have studiously avoided discussing a visitor. He'll be really surprised when his buddy shows up.

Back in the day, I always added celery and mushrooms. It's been a while since I've done that.
I've become more lactose sensitive in recent years, so I rarely eat Mac and cheese anymore.

Steam-fried in evoo and veggie broth: chopped onion, yellow bell pepper, trimmed snap peas, sliced mushrooms and minced garlic. When done I added air-fried tofu cubes, cooked brown rice, and vegan butter. Crumbled seitan bacon on top after plating. Cheers!🥂

Normally, I rarely ever get food from restaurants, but someone had given me a gift card to Portillo‘s which was going to expire at midnight tonight, so I had to use it. Yeah, I’m in the Chicagoland area, and if you know about Portillo‘s ribs (if you know you know ) they are excellent. Also, no dishes tonight!

I probably spelled that wrong... Besides onion, I'm adding matchsticks of green pepper and red bell pepper to it. I needed something to eat that had some real flavor and a few healthy additions added to it. My daughter in law can't cook worth a darn. And I need to talk to her about it. What she's putting together isn't bad, but she leans on the frozen tyson chicken tenders, and other processed foods like that. I'd like to teach her about food... real food. But it's a slow go... especially when I'm still laid up with a bad knee/leg.
